Chef, Ian Tozer

The chef and creator behind Hello Green Grub. A British-born chef with over 30 years of experience in Japan’s culinary industry, Ian has been a key figure behind some of Tokyo’s much-loved establishments. For 17 years, he owned and operated his own popular American brasserie in Minato-ku—a notable achievement in Tokyo’s fast-paced and competitive dining scene.


Ian’s career is built on leadership roles with global hospitality brands, including Hyatt Regency Kyoto and the Andaz Hotel in Seoul. His professional footprint also includes pivotal work with T.Y. Harbor Brewery, Elle Café, and Urth Caffé. Beyond the kitchen, Ian is a respected Food & Beverage consultant who has spearheaded numerous high-profile projects.


His extensive background in high-end catering spans three continents. Ian spent several years working with an award-winning premium events and wedding caterer in the UK, following a decade in the United States managing large-scale banqueting for major hotel chains. In Tokyo, he has provided bespoke catering for global corporate giants including Apple Japan, Bloomberg, and Goldman Sachs. One of his most unique career highlights involved catering for Tom Cruise, providing the food for the private Shinkansen charter from Tokyo to Osaka for the premiere of Mission: Impossible.

At Hello Green Grub, Ian merges these decades of practical, high-level expertise with a focus on the future: creating exceptional plant-based food and championing sustainable dining.
